Banana Bread

This recipe is delicious! SO moist!! I cooked mine for 60 minutes. I'd say you could do it up to 62, but after that (if you're using the loaf pans) it starts to dry out.

The Best Banana Bread

Ingredients:

1 Loaf 2 Loaves
1 2/3 cup 3 1/3 cups plain flour
1 tsp 2 tsp baking soda
½ tsp 1 tsp salt
½ cup 1 cup butter, softened
1 cup 2 cups sugar
2 4 eggs, lightly beaten
1 tsp 2 tsp vanilla
½ cup 1 cup sour cream*
1 ¼ cup 2 ½ cup over-ripe bananas, mashed
½ cup 1 cup(heaping) raw walnuts or pecans

*Low fat ok; nonfat not ok*

Directions:
• Preheat oven to 350 degrees F
• Bring eggs to room temp. Soften butter in large bowl
• Grease bottom only of shiny loaf pan(s).
• In medium bowl, sift flour, baking soda, and salt together; set aside
• In large bowl, cream softened butter and sugar (with large wooden spoon)
• Add eggs and vanilla; mix
• Add sour cream and mashed bananas; mix
• Add walnuts; mix
• Gradually add dry ingredients; mix just until moistened
• Bake until toothpick comes out clean
• 9” pan: 65-70 minutes (I did 60) 8” pan: 75-80 minutes
• Set of 3 tea-loaves: (7”x3.5”) 40-45 minutes
• Cool on rack 10-15 minutes.
• Loosen sides and bottom of loaf with thin metal spatula, and then transfer to flat surface (e.g. biscuit sheet). Cool completely (2 hours) on rack for easiest slicing.

I made it and my family just loved banana bread very much! :D
